What’s better than Thanksgiving dinner? Leftovers! I’ve turned stuffing into meatballs, mashed potatoes into potato cakes, and cranberry sauce into dessert. But sometimes all you need is a good sandwich. A turkey sandwich is probably the easiest post-Thanksgiving meal to quickly whip up. And after putting in all of the effort to cook the bird the day before, you want to extend its eating life as far as possible. Piling it high on a sandwich is just the way to do it!

I love roasting vegetables. There’s something about the slight caramelization combined with the perfect amount of seasoning that is irresistible. Another plus: it’s really easy. When I’m cooking for myself on a busy weekday, there’s nothing easier than prepping whatever vegetables are in my fridge and throwing them in the oven. Set a timer and in 20-30 minutes dinner is served (well, part of it at least). I roast a lot of vegetables for the holidays as well. “No muss-no fuss” is the way to go when you’re cooking for a large group of people.

It’s that time of year again when I cannot contain my excitement for cozying up on the couch with a big bowl of soup. Cold weather and soup go hand in hand, especially when the soup contains an explosion of autumn flavors. While chunky stews are great and definitely serve that “comfort food” purpose, there’s nothing better than a smooth and silky soup to warm you up when the crisp November air settles in.

It’s always nice to make a quick and easy pasta dish on busy days when I feel like cooking, but don’t want to spend hours in the kitchen. I look for ingredients around the house or in the garden to use, and by the time the pasta is cooked, the sauce is ready and dinner is served.

Every Sunday, my family and I make a huge breakfast spread. We like to change it up…pancakes one week, omelets the next…but our absolute favorite morning treat is a mound of crepes with toppings galore. Soft and dense, smooth and sweet, these crepes are the best way to start your morning. They have become quite a tradition in our house, and while the crepes stay the same, the toppings are always new and exciting.
