Never a huge fan of traditional pumpkin pie, I love finding other ways of incorporating pumpkin into my meals – roasted pumpkin soup, pumpkin cheesecake, or maybe using the seeds in a pesto. This pumpkin cornbread pudding I’ve created is definitely up there on the list.

Josh, like many Americans, graduated with a college degree hoping that he would find a rewarding job and financial security. His degree is in electronics and information technology (IT), and although IT is a growing industry, Josh wasn’t pleased with the way the market looked for jobs in his field.
